If you used the pressure canner, they should be fine. I pressure canned carrots last year and we've been eating them with no problems. <br><br>If you do try them, maybe try them on a Saturday or Sunday when your husband is around to make sure there would be someone to take you to the ER.<br><br>Don't take it lightly. This is what Wikipedia says,<br><br> "Botulism can result in death due to respiratory failure.
