Long Island Cheese Pumpkin Pie....

Start with your very own Long Island Cheese Pumpkin that you grew in your very own backyard this summer.
Then scoop out the insides and save the seeds...
Rinse the seeds off... then scatter them on a paper plate to dry for a few days before putting them in a paper envelope. Congratulations... you just save yourself $2.75+ and now you have seeds to grow next years pumpkins...
Arrange cut pumpkin onto baking sheets... add a slice of butter and sprinkle with cinnamon...
Bake at 375 degrees for about an hour...or until softened.
Eat a piece of candy...
Oh look... the squash is ready...
Slice the squash from the peel and toss in the blender...
And puree. This pumpkin yielded enough for 4 pies.
Save the scraps for the chickens...
Mix together 2 cups pumpkin puree, 3 eggs, 1/2 cup half and half, 1/2 cup brown sugar, 1/2 teaspoon allspice, 1/2 teaspoon cinnamon,1/2 teaspoon ginger and 1/2 teaspoon salt.

The color is amazing... 100 times better than that stuff in a can.
Pour into an unbaked pie crust and bake for 50 minutes or so at 375 degrees.
BEAUTIFUL... HOMEMADE... PUMPKIN ...PIE

I'm really getting into this "eating what you grow thing"... I just need to start finding things to make other than pies...

Now, all I have to do is find the catalog that sells seeds for Cool Ranch Doritos and Almond Joy candy bars and then I can buy that 20 acres and live off the land.
