Weekly Dinner Update... Week 4 of 52


Monday night we had cheese quesadilla's and a yummy cheese/bean dip...


and homemade Vanilla Bean ice cream with warmed peach butter sauce...


Tuesday night was left over night... basically... grab a plate and eat what you want. I of course choose beans and rice...other choices included vegetables, chili, rice and left over homemade mac & cheese...I think the canned peaches were an after thought...as in.. here... put these on your plate... canned peaches and cauliflower go so well together...

Wednesday was Ham (left over from Christmas... I froze it) with apple butter, mashed potatoes and corn... I was planning on making thyhand's ham casserole but I didn't make the time...

Thursday night was pasta, stuffed peppers with cheese & french bread from PANERA that I managed to slightly burn... It appears that everyone thinks I should take cooking lessons... I can't imagine way...


Friday was French toast...
it's my secret way of getting the Handsome Husband to eat eggs...


Saturday night we ate baked chicken, rice and carrots...


Sunday we ate giant burritos... I stuffed mine with chicken, homemade refried beans, rice, cheese, salsa and 1/2 an avocado...

My new favorite thing is avocado's...
I LOVE THEM...
they are my new bff...

In fact...
I think I'll go make myself an avocado sandwich right now...

  1. Yum! These posts always make me hungry. Your burritos, stuffed peppers and french toast specifically make me want to go make dinner right now- at 10:00 in the morning. I voted for you to take cooking classes- not because you can't cook (you can, by the way) but because I think it would be so very fun! I'm going to live vicariously through you if you take them, ok? You're going to have to post about what you learn. Or else.:-)

  2. One of my first jobs was that of a window washer and carpet cleaner in a hotel. One of the perks was that we were able to get free lunch from the restaurant, it was at this time that I was introduced to my very first avocado served in a taco salad. I have been addicted to them ever since. So I will go with Sundays meal as my favorite.:) The stuffed peppers look delicious too!

  3. In Australia there was this little restaurant chain I would go to that would to where you could get avocado on your toast/sandwich instead of butter or mayo. It was awesome. Avocado toast and egg is better than it sounds.

  5. I am SO jealous of your homemade ice cream ~ I am definitely putting the ice cream attachment on my "wish list". You incorporated lots of cheese into your menu ~ is your supply diminishing yet? :)

    Mr.H... Ahh the power of free food...Avocado's RULE!

    Tori...I think I will try the avocado and egg toast today for lunch :)

    Leopard Girl... Did you watch the video on her website? And read the comments... they sit around after the "meal" and drink wine and talk about the class...I don't think her classes are for me... she'd probably throw us out... or at the very least scold us...

    Camille...I highly suggest you just go out and buy the thing... maybe you could use the angle that you would be "saving money" via making your own ice cream vs buying ice cream :) Cheese: I think I've used 6 bags so far... only 9 more to go...
