Pancakes.....from scratch?

Growing up in Suburbia.....
and then raising your own kids in Suburbia.......
is strange....

Take this morning for example......
I discovered I'm out of pancake mix.....

PANCAKE MIX?

What am I suppose to do now? The monkeys must eat a real "hot" breakfast before starting their day....I'm not sending them off to school without "real food"....if the handsome husband and the little people want crappy sugar laced cereal....then they can have it on the weekend....
not on a school day.....

Back to the pancakes.......

I had no idea that you could make pancakes from scratch.....
from what I remember....my mom always bought the frozen pancakes in the box....
and I have always bought a giant 5lb bag of pancake mix.....
How can this be? How do you get to be my age and have never made a real pancake that does not involve "just add water"
What a sheltered life I have been living all these years.....
and I didn't even know it.....

Until I decided to grow a bunch of food in the backyard one summer and actually take an active interest in how much money I was spending on food ......
Holy crap....look at all the pancakes it makes.....the book said I could store the extra batter in the fridge.....but that would just stress me out.....the batter would be staring back at me all week long every time I opened the fridge....and I don't have time for a pancake batter guilt trip this week.
So I just froze the extra pancakes for later in the week....
Don't you just love it when people dress up for breakfast.....

Breakfast is served.....
and it didn't come from a box or a mix...whooo hoooo.....

  1. During the winter, pancakes are our Sunday dinner, made by Jamey with red raspberries or blueberries, topped with peanut butter and or syrup. Divine. Yours look fabulous and with sausage to boot! Pat yourself on the shoulder, Ms. Mavis.

  4. I've always made pancakes from scratcg - my mum has a foolproof recipe which has never let me down

1 cup self raising flour (you will need to add some baking powder to your plain flour over in the US, about 1 tsp I think?)

    1 cup milk

    1 egg

beat together, adding more milk if needed, and leave for 1/2 to get nice and gluggy :) the best part? it is so easy to double, triple, whatever you need :)

we use it for pikelets too, with fig jam and whipped cream, YUM!

  6. Congratulations on making from scratch! I also make extra waffles and freeze too. Hint to make your milk into buttermilk add 1 tsp vinegar to your measuring cup and top with milk called for in the recipe and let sit for about 5 minutes, then continue with your recipe.

I LOVE comments BUT if you know who we are...due to the fact that we are currently enrolled in the international witness relocation program because of a moon shining incident in Dingle, Ireland involving 3 Mutton, a pair of red shoes and a road flare .... please do not reveal our personal information.... You know.... like names, places, or our favorite brand of toilet paper :) Hey, thanks!
