The Best Chocolate Pound Cake Ever...

In an effort to bake my way thru 5lbs of cocoa powder I came across a recipe (Hershey's) for possibly the best chocolate pound cake ever... (okay... so it's the first one I have ever made... but it was soooo good I just had to tell you about it).

In your mixing bowl combine 1 1/4 cups of flour, 1 1/4 cups of sugar, 1/3 cocoa powder, 1/4 tea. baking powder and 1/4 tea. baking soda... Now, if you a super serious baker... you'll probably want to sift your dry ingredients... but me? Forget about it... this is pound cake were talking about...not a souffle...


Add 3 freshly laid organic eggs...
Turn the mixer on medium and blend for a minute......


Then add 1 stick of softened butter ( I used salted because it was all I had on hand)...
and 1/3 cup of sour cream...


And blend again on Medium speed for about 2 minutes...
scrape down the sides and blend again...


Now would be a good time to hunt down your loaf pan...
If your cupboards are anything like mine you might need a few minutes for this task...


And don't forget to toss your egg shells into your compost bin while you're at it...


Pour your pound cake batter into a prepared (buttered) pan...


Place in a 325 degree oven... make sure you have burnt crusty stuff on the bottom of your oven... it think it helps with the overall insulation of the cake... I'm kidding... I just tell that to my handsome husband when he complains about there being a bunch of burnt crusty stuff on the bottom of our oven... and honestly ... I have no idea why he complains... for 1. He doesn't even USE the oven... in fact... I don't think he even knows where the dishes are in this house... and #2 "Cleaning the oven" is man's job... you know... just like all the other unpleasant jobs husbands are in charge of...like cleaning the gutters... digging holes... killing spiders... unclogging toilets... shootin' coons in your under roo's... you know... stuff like that...


Okay... set your timer for 50 minutes... then after 50 minutes check on your pound cake... maybe it needs another 10 minutes... maybe not...


Oh yeah...then take it out of the oven...let it cool on a rack for 5 minutes and then take it out of the pan...scarf down 2 pieces... THEN remember to take a picture of it when you come back for thirds...

I'm telling you... if you ever find yourself with a 1/3 cup of cocoa on hand... you should try this chocolate pound cake... it's not too buttery, not too sweet... it's just right if you ask me.

  2. MamaJJ....Someone in this house received a rather large container of pistachios for Christmas and is steadily working their way it. I really like the idea of giving food at Christmas... especially if you have a double coupon :)
